- Natural fermentation takes place in concrete open-top fermenters with a small portion of whole cluster fermentation.
- The nose shows red and black fruit, some incense-like perfume, white pepper and spice plus a little earthiness.
- The palate is light-bodied with lemon-like acidity and fine but not ungrippy tannins
- A super-flavourful drop.
- Daily punch downs and after a 14-day fermentation the wine is basket pressed.
- Maturation takes place in 500l barrels over 12 months. No new oak, only second fill barrels and older French oak barrels
- Cellaring Potential: 2-3 years
