Farmed dry-land, thus not irrigated. Selected from various sites on the farm. The Syrah bush vines are aged between 15-40 years. Handpicked early in the morning the grapes were hand-sorted and all “under-ripe” bunches were removed. The grapes were partially whole-bunch fermented and the remainder destemmed. Fermented in a vast variety of foudre’s, big French oak barrels and concrete tanks
